What are you cooking?

Kind of in the vein of 'what are you eating...' this is: 'What are you cooking?' I know that lesbians and bi-women cook, I've seen them on Top Chef! Plus, I cook pretty much every single day. I love cooking, it relaxes me. To the mods: If this is a repeat forum, sorry. I looked for a 'What are you cooking' forum and after several pages in fun&games gave up and assumed it would be fresh.

Im with Ann...eating healtier you have to spend a whole lot of money. So i stcik to Lean Cuisine's! But I actually cooked tonight grilled saute mushroom chicken with rice. Oh had to add some calories with that so i added beer with it.

quick dinner

My partner and I wanted to catch the beginning of the Rockies/Padres game so I prepared ahead and marinated a small flank steak in a red  wine herb mixture while I was at work.  Then came home and made a wild mushroom risotto and some wilted baby spinach w/fried garlic chips to accompany the grilled flank steak.  deeelish

Parmesan crusted chicken breast over pasta

This was take-out from yesterday that I microwaved to perfection.  Yum!  Sadly, neither my wife or I like to cook so we don't.  It's a life of eating out, take-out, or zapping frozen dinners.  Works for us!

No, I didn’t cook it.  I paid some nice man in a restaurant to make it for me. 

If I made dinner at home, it would’ve been cold cereal.  Or eggs.  Or that perennial favorite – Chinese takeout from the corner!

Sounds delicious! I really envy you the diversity of restaurants that you get in NYC v. Pgh. I mean, we get some decent diversity, but any diversity here is seen as good, without actually having to be good.

It's What Was For Dinner

  • Veal Scallopini
  • 4 veal cutlets
  • 2 TBSP butter
  • 3 TBSP extra virgin olive oil (and no Rachel Ray, I am NOT going to say EVOO)
  • 8 mushrooms sliced
  • salt and pepper
  • 4oz heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 C red wine (plus the rest of the bottle)
  • 1 clove garlic
  • 1 C flour
  • 1 tps parsley flakes
  • pinch of paprika
  • 1 medium onion finely chopped
  • 2C veal or beef stock

 

Melt butter and saute onion and mushrooms until onion is translucent and the mushrooms are lightly browned. Set aside. In a large heavy bottomed skillet brown the garlic in the olive oil. In a bowl combine the flour, paprika, salt and pepper, and Parmesan cheese, mix well. Dredge the veal through the dry mixture, making sure that it is well coated on both sides. Brown both sides of the veal in the hot garlic infused olive oil in the skillet. Add the wine and stock and simmer for 20-30 minutes, the liquid should be reduced by half. Cook your choice of pasta per the packaged instructions. Just before serving add the cream to the veal dish and stir well. As a side note, you can leave the cream out entirely if you want, but I think it's more satisfying with it in!

This is not a thread but a threat - to my sanity

I never cook, I can´t. It´s far too complex for me, too many imponderables to handle. I can´t even handle ordering from a Chinese restaurant´s menu. The only thing I "cook" is tea and even that I burn. (But if you ever have complex business or financial processes to analyze, call me.)

Jennifer: I hate you for starting this mouth-watering threat.

Mental note to self: Never come back to this thread - at least not until the zero-calorie-diet is over - in a couple of years or so.

(Did I mention I had oysters last night on an empty stomach ? Zero calories. Oh, and it was a birthday dinner, thus, not really my fault).

Mediterranean Pasta

Mediterranean Pasta
(Not as fancy as Jennifer's Recipe, but tasty)
This is a meatless recipe, but you can add the "meat of your choice" (if you wish).

2-3       Large Red Peppers
1          Large Onion
2          Heaping Teaspoons of Fresh Chopped Garlic
1          8 oz. can Tomato Sauce
½         Can of Water (4 oz. total)
1          Vegetable Boullion cube
2          2.5 oz. Cans Sliced, Pitted Black Olives
¼         Cup Olive Oil
¼         Parsley
1          Box of Penne Pasta

Clean and thinly slice peppers and onions.

Put in pan with all other ingredients except noodles and cook until peppers and onions are tender and liquid is reduced.

Cook and drain noodles.  Pour heated sauce over noodles and toss.

Serve hot with a sprinkle of Parmesan Cheese.

NOTE:  Cooking the main ingredients ahead of time and letting them sit in the fridge overnight adds intensity!

I love stuff like this. Most of the time this is how Caty, the kids and I eat. One night I was too lazy to cut up some veggies so I just cooked the linguini, melted butter over it, and tossed it with romano cheese. Add a salad and that's dinner.

quick snack

Well am too lazy to cook right now so toasted some brown bread, scrambled 2 eggs, and fried 2 Vienas (sliced thinly), topped the toasted bread with the eggs ans sausage, shredded some cheese over, placed in the microwave for a few secs, and viola, awesome snack :-)

OOo, I like this thread!

Since it's cool enough to keep the windows open, I am going to make French Onion soup with fresh gruyere cheese and Italian bread tomorrow.  I need to get over this cooking guilt. 

You see, the last time I made French Onion Soup in this poorly-ventilated apartment my poor cat was traumatized.  As the onions were caramelizing, I sat at my computer: Probably surfing AfterEllen.  I looked to Xena, sitting to my immediate left on her cat-thing, squinting at me with her eyes full of tears.  It was like she was there just to stare at me wondering why I could do such a thing to her.

Very traumatizing.

Two extremes

I love to cook but don't often have the time/money to. This semester I've started taking over our weekly Top Model night as an excuse to make some sort of dish for all my friends, be it a full meal or dessert.

 But usually I'm just grabbing what's fast and end up eating some sort of concoction like this evenings dinner:

Post Banana Nut Crunch Cereal mixed with yogurt and chocolate syrup. Better if I'd bought bananas to cut up in it.

Here though is a favorite I like to make for a crowd, substituting veggie (faux)bacon comes out pretty well also:

 Gorganzola Cheesecake

To make 2 - 4" springform pans (double for 9")
 
Coat the inside of the springform with butter.
 
In a blender, puree 1/2 cup of bread crumbs, 1/2 cup of cheddar cheese, 1 clove of garlic and a bit less than a 1/4 stick of butter.  Press this mixture into the bottom of the pan(s).
 
In a skillet sautee 5 to 6 slices of fine chopped bacon, when fairly crisp, drain most of the fat, leaving a little for flavor and add fine chopped red onion (or green onion) and sautee until softened.
 
In a mixing bowl combine bacon and onion with 8oz of softened cream cheese with two egg yolks (I found that the whole eggs made it too quiche like, just yolks keeps it creamier) and 4oz of gorgonzola (or substitute roquefort) cheese crumbles and whisk until a smooth batter.
 
Pour mixture evenly into the springforms and bake at 300 degrees for about 45 minutes to 1 hour or until the middles don't jiggle.  Cool 30 minutes and place in fridge until ready to serve.

Another crowd pleaser that requires a little less effort- heat butter and olive oil in a skillet, slowly cook sliced up onion (with a bit of salt to bring out the natural sugars) until caramelized, about 5 min before it's done (I like to use low heat, so it takes about 35 min) add some rosemary and garlic seasoning.

Put this on some goat cheese on top of crackers. Yum.

I'm very shocked to hear about all you women who do not cook!! How can you not cook? Or even worse, how can you live on microwaved food and take out???

I love to cook...I wouldn't say I am the world best cook, but I am not too bad either. It's fun, it's relaxing and most of all it is worth it not to have to eat crap.

Still, the only thing I love more than to cook is to have a hot woman cook me a nice meal....

besides I didn't say that I don't cook, I just don't feel like cooking today - which means I'll probably just whip up a nice salad or something but even if I was inclined to stoop to junk food, that would be my business - In Other Words: none of yours.

Therefore, I was slightly baffled by your reaction. 

E numbers are the names of all the additives you find in most microwave food or take out, like chinese. I wasn't serious, that was sarcasm ;-)

Like I said before

cooking is too complex for me. Besides, I was too busy not fulfilling those standard gender roles by repairing all sort of machines and engines and playing football.

Luckily, I have a mother who is excellent at cooking. Although, she never managed to "downsize" after the last brother moved out. Which means, I became the new "horse".

Anyway, Crimson013, I didn´t think that Natazzz´s post deserved such a strong response. We all appreciate humour around here.

Natazzz, re. the E-xxx: I thought the "aggressiveness"-theory related to meat. Which E-xxxs would that be ? There are too many E-xxxs in our lives. At least in mine.

Most artificial stuff they add to instant meals etc. is not good for you. I think all E numbers are bad, although I know a few specific ones (like the ones in for example instant noodles) can cause a number of health problems.

They actually did studies in prisons where they gave the prisoners decent food prepared from fresh non-artificial ingredients instead of their usual junk, and aggression, hostility, number of fights etc. decreased dramatically.

Personally, I get hyperactive and almost euphoric when I eat instant noodles...
